This speciality coffee is from the El Peñón micro-farm of the La Bastilla Estate in Jinotega, Nicaragua. This farm has optimum soil and altitude for the Red Catuai varietal and the low temperature slow drying process of the coffee cherries after harvest produces beautifully concentrated fruit flavours and sugars in the coffee. It is the most intensive and time-consuming coffee produced by La Bastilla, but the end result is exceptional.
